Fruit Macaroons
2 eggs whites
3/4 cup brown sugar
3/4 cup chopped dates
1/2 cup chopped red and green cherries
1/4 cup finely cut mixed peel
1/2 teaspoon vanilla
1 1/2 cups shredded toasted cocoanut
Add salt to egg whites and beat until stiff; add sugar gradually; add flavouring and fold in fruit and toasted cocoanut. Drop on greased cookie sheet. Bake in a moderately slow oven, 300 F., until a light golden brown and firm to the touch.
