Cherry and Nut Icebox Cookies
2/3 cup butter
1 cup brown sugar
1 egg, well beaten
2 1/2 cups sifted flour
1/2 teaspoon baking soda
1/2 teaspoon almond extract
1/2 cup chopped cherries
1/2 cup chopped almonds, blanched
Cream butter thoroughly. Gradually add sugar, creaming between each addition. Add beaten egg and flvouring. Mix and sift dry ingredients, using about 1/4 cup of the flour to sprinkle over the cherries and nuts. Add flour, fruit and nuts. Form into a roll. Chill overnight. Slice with a sharp knife. Bake in a moderate oven, 375, for 8 to 10 minutes.
